Chicken Papaya Recipe

Chicken Papaya (Chicken Tinola)

Ingredients:
1 whole chicken, cut into serving pieces
4 cloves garlic, chopped
2 knobs ginger, julienned
1 medium onion, julienned
1 small green papaya, peeled, seeded and
cubed
2 tablespoons chicken bouillon
2 tablespoons fish sauce
6 cups water
1 cup chili leaves (optional)
vegetable oil
salt

Directions:
In a deep pan, saute garlic and onions in hot oil and cook until onions are translucent
Add ginger and cook for 1 minute
Add chicken pieces and fish sauce and cook until chicken changes color
Add water & chicken bouillon
Cover pan and simmer until chicken is tender
Add papaya and chili leaves and continue to cook until papaya is fork tender
Season with salt
Serve piping hot

    hi, villalobos! thank you for your response. actually, i don’t eat pork and beef so what i do is when i see recipes that contain pork and or beef as well as other ingredients or products made from pork and or beef, i substitute chicken for them or tofu. i’m a vegetarian who eats chicken and fish. i really love veggies and they’re what i eat most of the time.

    I admire your discipline. I wish I could be a vegetarian too. Back in the Philippines I took for granted the affordability and the freshness of our vegetables there - the sitaws, the eggplants, snowpeas, etc.. I just realized how expensive the tropical vegetables are here in the U.S. Keep on cooking.
