Kare-Kare
(Ox Tail Stew in Peanut Sauce)

Ingredients:
2 pounds ox tail, cut 2-inch long
4 cloves garlic, minced
1 medium onion, chopped
2 cups string beans, cut 3-inch long
2 chinese eggplants, cut crosswise
into1-inch long
1 banana blossom, quartered
1 pound bokchoy (pechay), halved
½ cup toasted rice, ground
1 cup toasted peanuts, ground
2 tablespoons annato seed oil
salt
sauteed shrimp paste (see instructions below)
Directions:
In a stock pan, simmer ox tail in water with 2 tablespoons of salt and cook until fork tender
In a separate pan, heat annato oil and saute garlic and onion until onion is translucent
Add the broth and the banana blossom and simmer for about 5 minutes or until banana blossom is
tender
Add bokchoy, eggplants, and string beans and cook for about 3 minutes
Remove all the vegetables from the pan and set aside
Add ox tails, ground peanuts, and ground rice to the broth and simmer until sauce is thick.
Season with salt
Add vegetables before serving with sauteed shrimp paste on the side
Sauteed Shrimp Paste:
Saute 4 cloves of garlic (minced) and 1 medium onion (chopped) until onion is translucent.
Add 1 medium tomato (chopped), 1 cup of shrimp paste and 1 tablespoon of sugar
and cook for 3 minutes or until tomato is cooked.
