Mixed Vegetables in Peanut Sauce Recipe

Ingredients:
1 chicken breast
2 tbsp vegetable oil
4 cloves garlic, chopped
1 large onion, sliced
½ tsp black pepper
2 cups carrots, julienned
2 cups sweet potato, julienned
2 cups jicama, julienned
2 cups green beans, thinly cut
diagonally
3 tbsp fish sauce
1 cup fresh cilantro, roughly chopped
Directions:
Boil chicken breast in water until tender. Save broth. Julienne chicken breast.
Saute garlic over medium heat until garlic is bright yellow. Add onions and continue to cook until
translucent
Add chicken, fish sauce, black pepper and saute for about 3 minutes
Add the rest of the vegetables except cilantro and toss for 2 minutes
Add chicken broth and peanut butter and cook until sweet potato is tender but still firm
Serve warm topped with Soy Sauce and Garlic Sauce (see directions below) and chopped cilantro
Soy Sauce & Garlic Topping
2 cups water
2 tbsp soy sauce
3 tbsp brown sugar
3 cloves of garlic, minced
2 tbsp corn starch dissolved in
½ cup water
In a small saucepan, combine water, soy sauce, and brown sugar and bring to a boil
Add garlic and cornstarch solution. Stir continuously until sauce is lightly thick.
