Snow Peas with Cellophane Noodles Recipe

Tested, tasted by CarlosMiguel (The Confession of a Cook)

Ingredients:
1 pound fresh snow peas, ends trimmed
1 chicken breast, shredded
1/2 cup & 1 cup chicken broth
2 ounces cellophane noodles, soaked in warm water
3 cloves garlic, minced
1 medium onion, thinly sliced
2 tablespoons vegetable oil
3 tablespoons fish sauce
freshly ground pepper, salt to taste

Directions:

Boil chicken breast in 3 cups of water and 1 tablespoon salt until tender. Save broth.

Let chicken cool for several minutes and then shred.

In a wok, saute garlic and onion over medium high heat until onion is translucent.

Add shredded chicken, fish sauce, freshly ground black pepper, and 1/2 cup chicken broth and cook for 2 minutes over medium heat.

Add snow peas and saute until peas turn bright green.

Add another 1 cup of chicken broth then add the cellophane noodles and cook for another 1 minute.

Add salt to taste.

Serve warm.
